Nitrile vs. Vinyl vs. Latex vs. Poly Gloves: Which Should You Buy?
Compare disposable glove materials, match them to your work, and shop nitrile, vinyl, poly, TPE and specialty gloves by size.

Start with the job, then choose the material
A sandwich counter, a dish sink and an oven station need different things from a glove. Buying one style for every task makes the order simpler, but it can create a poor fit at the workstation. Start by separating food handling, cleaning, hot equipment and any work involving sharp tools or hazardous substances.
For routine disposable-glove purchasing, compare how the glove fits, how much fingertip control the task needs, how often staff change gloves and what the product is actually specified to do. Material is a useful first filter. It is not a complete protection rating.
A practical material comparison
| Material | Where to start your comparison | Buying detail to check |
|---|---|---|
| Nitrile | Closer-fitting disposable styles for handling tasks that call for finger control. | Thickness, surface texture and exact intended-use specifications. |
| Vinyl | Routine tasks where an economical disposable option meets the requirements. | Fit during repeated hand movement; do a station trial. |
| Polyethylene / poly | Short handling steps with frequent changes, such as bakery or deli service. | Loose fit, glove count and box versus master-case quantity. |
| Stretch-poly / TPE | A stretchier alternative to standard loose poly for quick food-prep work. | Actual fit and cuff behavior; TPE is not nitrile. |
| Latex | Tasks where natural rubber latex is permitted and appropriate. | Latex restrictions, user sensitivities and intended use. |
| Reusable cleaning styles | Dish stations and cleaning jobs with a documented glove match. | Specific cleaner compatibility, cuff length and care instructions. |
| Oven mitts | Handling hot cookware with a product rated for that task. | Contact conditions, coverage and each-versus-pair quantity. |
Build a shortlist for your actual station
A deli can compare standard poly with TPE during quick assembly, then compare nitrile if the loose styles interfere with the work. A meat counter should evaluate finger control and fit separately from its knife-protection requirements. A bakery needs disposable food-handling gloves at one station and dedicated oven mitts at another.
For coffee carts and drink shops, map the transitions between payment, phone use, garnish prep and service. A box within reach matters more than ordering the same material another business uses. Our food-prep station guide walks through these transitions.
For California food operations, start with non-latex options; see the latex guide and California source before choosing latex.
Three labels that deserve a second look
- Black or blue: color does not tell you the material. KEVIDKO carries both black vinyl and black nitrile.
- Heavy duty: compare a measurable specification and the intended use. A thicker disposable is not automatically a cut glove or oven glove.
- Exam or medical: do not infer this from appearance or material. Verify the exact product documentation.
The FDA explains how medical gloves are regulated. An ordinary food-prep purchase should never quietly become a medical-use recommendation.
Run a small trial before switching the whole business
- Pick one representative station and offer the sizes staff actually wear.
- Record gloves consumed, failed donning attempts, tears and staff feedback for comparable work.
- Separate necessary task changes from avoidable waste caused by poor fit.
- Compare the delivered cost per usable glove, then order the winning style by size.
Use the fit checklist and case-cost worksheet to turn that trial into a repeatable purchasing decision.
