Build the glove routine around task changes
A food-prep glove program works when the right sizes are accessible and the change points are clear. Start by listing what employees touch during service: ingredients, packaging, payment devices, phones, equipment handles and waste. Then design the transitions back to food handling.
The FDA Food Code is a model used by jurisdictions; follow your locally adopted requirements. Its single-use glove rule calls for one task per use and disposal when gloves are damaged, soiled or work is interrupted. Wash and dry hands before putting on gloves for food work; gloves do not replace handwashing. Do not wash disposable gloves for reuse.

A change checklist for the station
- Raw food to ready-to-eat food: remove gloves, wash and dry hands, and put on fresh gloves before the new task.
- Phone, payment or waste: stop and reset before returning to food prep.
- Tear, puncture or soil: discard the gloves and follow the handwashing and replacement routine.
- Different task or interruption: change instead of continuing in the same gloves.
- Food allergen changeover: use your full allergen procedure, including tools and surfaces; a glove change alone does not clean the station.
Teach the reason for each transition during onboarding, then observe the workflow during a busy period. If correct changes are difficult, improve the station layout and staffing process.

Make the correct size easy to find
Label the dispenser by material and size. Keep replacement boxes in a protected location, and assign someone to check them before the rush. Compare the actual box dimensions with any holder; a holder described as universal still needs to fit the carton you buy.
Separate cleaning gloves from food-prep disposables and oven mitts. Staff should not have to infer a glove’s job from its color. Use the material comparison to choose the station’s approved options.
Use a five-minute shift demonstration
Have a team member demonstrate putting on the correct size, switching from a payment task back to prep, and replacing a torn glove. Ask them to point out the backup box and describe when they need to wash their hands. This reveals practical gaps faster than asking whether everyone has read a poster.
Track enough inventory to support the required changes. Use the reorder worksheet to set a minimum for each size, and revisit it when your menu, staffing or sales volume changes.
